Sundays are for late starts, buckets of coffee and pancakes the size of my face. I used to be a stacker but now I’m all about making one huge pancake per person. Cast iron skillets are perfect for this technique. I was inspired to try after watching

. Consider me transformed. The pancake is crispy on the outside and soft and fluffy on the inside. I didn’t think I was going to be able to finish this until I did.

Heat a 8 inch cast iron skillet over medium high heat. Add a tbsp coconut oil and enough batter to cover almost entire surface. Cover and reduce heat to medium. Let Cake cook for 3-4 minutes. Turn once the bottom is browned and sides are crispy. Don’t think about it, just go for it. I topped my pancakes with peaches, blues, granola and maple syrup.

Eggplant bacon (see yesterday’s reel), pancakes, caramelized banana and a salted date caramel sauce tasted ridiculously good. Since everyone seems to have a fave pancake recipe I thought I’d leave you with my sauce cause you need this in your repertoire.

Soak dates in very hot water for 10 minutes. Drain the water and place in highspeed blender. Scoop 1/2 cup of whipping cream (I used

) into the blender and add remaining ingredients. Blend on high, adding more milk if mixture is too thick.

Today is all about cleaning, laundry, cooking and getting out into the snow storm for groceries and fresh air. I subbed out my classes today and put off a meeting with my sponsor because I need to rest, nest and cook. I had an amazing week with

Sunday Funday with all the trimmings🥞🎃 Full disclosure, I made these pancakes yesterday but that doesn’t mean they can’t inspire you for your Sunday stack! These pumpkin spice buckwheat pancakes have the BEST texture thanks to the coconut kefir and apple cider vinegar. If you don’t believe me, make them yourself🎃

1 flax egg (1T ground flax+2 1/2 tbsp water)

Preheat oven 250. Make flax egg, set aside 10 min. In large glass measuring cup mix cashew milk, ACV, kefir, pumpkin purée and vanilla. Whisk and set aside 5 minutes. Whisk dry ingredients and then add wet to dry. Fold in flax egg. Let batter rest while pan heats up. Spray with coconut oil or a pat vegan butter. I use a ladle for my pancakes. Ladle in one scoop per one pancake! Once cooked through place in preheated oven while you make the rest🥞

One of my most shared posts are these here pancakes. I made these beauties with buckwheat and oat flour, aquafaba egg and layered the lot with my vanilla chia pudding. They were pretty spectacular and thought they may inspire you for your weekend stack. If aquafaba (liquid from canned chickpeas—don’t knock it till you try it, this stuff is magic) isn’t in your pantry, flax egg or real egg if you aren’t vegan. 1 aquafaba egg (3tbsp chickpea “water”=1egg)

Firstly, Valentine’s Day is around the corner and I needed to celebrate early with the mister as this lil yogi is outta here again as of tomo (Vancouver peeps, I am coming for you!), so pink pancakes cause 💞💞💞. Secondly, I wanna say how very grateful I am as I finally got over the 10k mark!!! So, THANK YOU to all you awesome people out there. My niece requested chocolate chip pancakes so here we are! These pancakes are vegan and glutenfree but def not sugar free. I never add sugar to my pancake batter, I mean why would you when the natural most obvi thing to do is smother them in maple syrup and sometimes I just have to give the masses what they want hahaha😝 I stacked these with bananas, raspberries and a few extra chocolate chips cause if you’re going for it ya might as well really go for it😉 I put Mischa to work pouring the syrup and dare I say she was a pro🥞

Happy Easter Sunday!! There was NO WAY I was gonna let pancake Sunday pass by without sharing this Blood Orange Blueberry Poppyseed Stack (say that 5x fast😆) These pancakes are a hybrid of my recent pancake obsession so I’ll leave the recipe for you to save and make yourself. Strap yourself in cause these are gonna blow your socks off🐰

— Prepare flax egg, let gel 10 minutes. Mash banana into flax. Measure milk in a bowl, add juice, zest and vanilla. Mix dry, add wet to dry. Add blues and poppy seeds at the end.

It’s scary, lonely, and all consuming and until you’ve been there you just can’t describe how shit awful it is. You can do all the things that are prescribed.. medication, meditation, holistic remedy, mantra, cleansing, reiki, cbd, weed, you name it.. but at the end of the day you could still feel like a pile of poo cause it just won’t stop... Huge love to you. All our pains are ours. Nobody can tell you how to feel. Doing the best you can every day is all we’ve got. Be kinder please. You never know what’s lurking under that half smile or resting bitch face🙏🏼
