Sun-Dried Tomato Pesto Eggs with Ricotta on toast 🤤

2 very heaping tablespoons sun-dried tomato pesto ( or any )

Please note: you can use any pesto you love, and the Ricotta is optional it is just as good without it. Hot sauce or chilli flakes is also totally up to you. Feel free to make these any way you love.

Add your pesto to a cold pan on medium high heat. Let your pesto heat up a touch and gently crack two eggs. Salt and dry oregano on top and let it cook for 1-2 minutes until the egg-white starts to form. Lid on and cook covered for the remainder of the time so that the yolk cooks as well ( you can reduce the heat to medium-low ) if needed. How cooked or runny you want the yolk will be up to you so you can keep opening the lid to check on it. Toast your favourite bread, add some fresh ricotta on top and your egg. Garnish with any fresh and finely chopped herbs and enjoy... Enjoy 🙌

Have you ever made a dill pesto? I think we’ve all been there; recipe calls for 2 tbsp of dill and then you’re left with a massive bunch trying to think of what to do with it before it goes in the chute. Well I came up with something to help you with that🌿

Place everything but oil in food processor. Pulse to get started and then drizzle olive oil in scraping down sides as needed. Taste for seasoning.

I roasted cauliflower and sautéed up shiitake mushrooms, chick peas, garlic, red onion and cooked a bag of this delicious elicoidali pasta. Mixed in 1/2 cup of pesto and omg. So good🌿

I think you’d agree that a big steaming bowl of carbs is like a giant warm hug and this macaroni with shrooms, olives, homemade vegan parm and sprouts was exactly that. I added avocado to this pesto which was awesome. You need to try it💚

Spring is officially here! The sun is shining and the birds are chirping. Spring means a shift in ingredients, but also in energy. Time to let things GO that no longer serve, release the small and petty and embrace fresh growth. Who else is with me?

Last nights dinner was the perfect example of what I’ll be playing with this season. Asparagus, peas, tons of homemade pesto , white beans, spinach, sprouts and tons of grated Parmesan. This dish bridges comfort food and fresh bright flavours that can’t help but make me smile. I hope it inspires you too💚

8 spears asparagus (cut in 1 inch pieces)

3/4 cup homemade pesto (cilantro, dill, parsley)

Sweet onion, chillis and garlic, add in asparagus sauté for several minutes. Add in splash of pasta water. Toss in peas and spinach, sauté for two minutes. Add in pesto and cooked pasta, toss to combine. Add in pasta water, micro greens and cheese. Season with salt and cracked pepper. Toss again. Serve immediately in bowl with extra cheese!

I just had a yogurt bowl bowl I’m already hungry for lunch. These roasted Rosemary potatoes with my vibrant basil cilantro pesto are the bomb and going on the blog TODAY. Served with a simple green salad with avocado and walnuts makes this one nutritious delicious lunch (or dinner!) Today is all about wellness, which for me starts in the kitchen💚 Happy Wednesday people☺️

Last nights dinner could not have been tastier or more efficient (check out my reel!). The mister made chilli a couple days ago so all I needed to do was make some rice. I also whipped up a quick basil walnut pesto to add freshness and a little zip to the dish🌱⚡️ We spent the majority of our weekend in the car but it was worth it. We got to see what we don’t like and a lot of what we do like. Buying property to build is going to be a long process but we we’re happy together the process started. Happy Monday!

How do you use up allllll that basil you have growing on your deck or in your garden? I vote pesto but that’s just me🌱 Basil is actually ahhhhhmazing in sweet and or savoury but the CLASSIC is always pesto right? I love adding lots of other greens in my basil pesto like pea shoots, arugula, spinach, mint, kale.. the options go on and on but the intention is always to make a clean green sauce to go into pasta like here🌱🌿

I love pizza night❤️ I have missed pizza as a food group because of the crust.  This crust is gluten free and absolutely delicious. I rocked a pesto made from the bro's garden. All the mixed greens, sunflower seeds and cashews, lemon, garlic, sea salt and evoo. Yummmmmy

From my experience here on the gram, the closer you get the more people like it, the further away you shoot, the more artistic. Personally, I love the further back but I guess I’m more dramatic haha. and created the most unreal Garlic Scape Feta Pesto that I was literally eating on repeat before coming to cottage. I incorporated it into a few dishes and while this one may be suuuper simple it was absolutely perfect. The sugar snaps we picked, yellow heirloom tomato, organic radishes

 farfalle, crispy tofu, avocado and arugula. These bowls don’t require a recipe, just whatever you yourself have on hand. So soooooo good. I will leave you with pesto recipe. It’s the bomb!!🌱😚

Place all ingredients except for olive oil  into bowl of a food processor and pulse several times to get started. Press start and slowly start to drizzle olive oil in, stopping to scrape down sides as needed. Process until you have a smooth consistency. Check for seasoning. Transfer to a jar. Will keep for up to two weeks and can be frozen for later use🌱

Good morning and happy Monday! This week the plan is to eat as much green food as possible💚☘️ My dill pesto (you sick of seeing it yet?) has found its way into yet another meal and this time it’s my WARM MEATY POTATO SALAD. I’ve been asked many times what my one food I couldn’t live without and I think I can answer POTATOES without hesitation. I love this riff on potato salad as there is my walnut tofu meat in there too. It’s takes on more of a main and less of a side and if that means more potatoes? I’m in!!!!

* 1 cup walnut tofu meat (recipe on site)

Preheat oven to 400. Parboil the potatoes in salted water until just fork tender. Place a strainer above the potatoes and put peas in to steam. Drain potatoes and place on baking sheet. Set peas aside while potatoes are baking. Drizzle 🥔with olive oil and seasoning with salt and pepper. Place in preheated oven for 25 min. Shaking halfway. Preheat a  pan and drizzle with olive oil and chili flakes. Add in tofu meat , roasted potatoes, pesto, spinach, toss to combine and cook until spinach

JUST starts to soften. Toss everything in a bowl, add peas, micro greens and taste for seasoning.
