Goat Cheese & Pesto Avo Toast with Poached Eggs — topped with parsley & aleppo pepper and served on sourdough 😵😵 Poached Egg Tips!!! 1. Don’t be afraid. It’s easier than it seems, and even if your egg looks ugly going in, it will usually end up working 2. Fill up a pan with about 2 inches of water and bring to a boil. Once it’s vigorously boiling, turn down just slightly before adding in your eggs. If it’s too vigorous, the egg will break apart. If it’s not boiling enough, the egg will just get all big and won’t stay together. 3. Crack in egg into a ramekin before you pour it in so you can gently ease it into the water. I add a splash of vinegar, take my spatula and create a swirl. I gently add the egg from the ramekin into the swirl. Adjust your heat as needed, and splash a little water on the top of your egg to make sure the tops cook nicely. 4. Keep your eye on the eggs. I never time, just eyeball. Once the whites look set, but the yolk looks all runny and jiggly in there, I remove the egg with a slotted spoon. Sometimes they’re pretty and picture perfect, oftentimes they’re not, but they almost always taste delicious! ✓By @kalememaybe 🖤
