Smoked Salmon Rainbow Nourish Bowl ๐ŸŒฑ๐Ÿซ๐Ÿฅ’๐Ÿ…โœจ Eat the rainbow by throwing together different fruit & veg in all shades ๐ŸŒˆ topped with a protein source (salmon, egg, tofu, beans, tempeh etc.) and a simple, tasty dressing! There are a few ingredients in the list, but youโ€™re welcome to make substitutions based on what youโ€™ve got in the fridge and cupboard. Hereโ€™s how to make this bowl ๐Ÿ‘‡ INGREDIENTS (makes 1-2 serves): โ€” 1 cup mixed leafy greens โ€” 1/2 cup sliced cherry tomatoes โ€” 1/5 cup red onion, sliced โ€” Sprinkle of alfalfa sprouts โ€” Handful of blueberries โ€” 1/4 cucumber, chopped โ€” 1/4 avocado, sliced โ€” 1 hard boiled egg, halved (optional) โ€” 40-50g smoked salmon (can sub tofu/tempeh/edamame) โ€” Dressing: mix juice of half a lemon + equivalent amount extra virgin olive oil in 50:50 ratio. Add a pinch of salt and pepper. METHOD: Assemble greens in a bowl. Arrange the rest of the ingredients in sections on top. Drizzle the lemon & olive oil dressing over the top.
