โจ Eat the rainbow by throwing together different fruit & veg in all shades ๐ topped with a protein source (salmon, egg, tofu, beans, tempeh etc.) and a simple, tasty dressing! There are a few ingredients in the list, but youโre welcome to make substitutions based on what youโve got in the fridge and cupboard. Hereโs how to make this bowl ๐ INGREDIENTS (makes 1-2 serves): โ 1 cup mixed leafy greens โ 1/2 cup sliced cherry tomatoes โ 1/5 cup red onion, sliced โ Sprinkle of alfalfa sprouts โ Handful of blueberries โ 1/4 cucumber, chopped โ 1/4 avocado, sliced โ 1 hard boiled egg, halved (optional) โ 40-50g smoked salmon (can sub tofu/tempeh/edamame) โ Dressing: mix juice of half a lemon + equivalent amount extra virgin olive oil in 50:50 ratio. Add a pinch of salt and pepper. METHOD: Assemble greens in a bowl. Arrange the rest of the ingredients in sections on top. Drizzle the lemon & olive oil dressing over the top.
