A change from Greek cuisine tonight as we enjoyed South Asian instead. Our favourite, potato and chick pea curry 🍛. This method is already in my highlights although I though I’d document the recipe for you. So here it is 😘. 1 sliced large brown onion. 2 cloves chopped garlic. 4-5 potatoes roughly cut 2cm pieces. 2 Tbsp @spiceandcomerchants Indian spice mix. Or you could create your own using a combination of spices such as cumin, coriander, turmeric, chilli powder, ground ginger and curry powder. 400g crushed tomato. 400g canned drained chick peas. 400g coconut milk. 200g fresh green beans (optional). 1 cup of water. A few handfuls of fresh spinach (optional). Salt and pepper. Fresh coriander to garnish. Serve with steamed rice 🍚. Head over to my highlights to watch the full method. Enjoy!
