I do not remember where I got this inspiration but whoever you are--- TY! Stuffed sweet potato with all the fixings... I roasted chickpeas (soaked and made from scratch) with cumin, sea salt, pepper, hot Indian chili and curry, made a tahini dressing, roasted some local asparagus and finished them with local greens, pea shoots, chives and the almighty avo🥑~~~~~ ugh is all I can say.  So good!!! ••••••••

It’s a weeeeee bit chilly out there today (-22 with a wind chill🌬🌬⛄️) so I’m getting my cozy on with hot lemon water, hot coffee and a hot bowl of cinnamon sweet potato oats. I busted into the latest jar of the parents maple syrup and holy crap it’s unreal. Oh SP toast you never fail to disappoint me! I love when the perfect sweet potato falls into your hands and screams, make me into toast! Getting the right SLICE is also imperative. Too thin or too thick makes a big difference!! Today’s toasts are smeared with almond butter, pumpkin granola and a savoury in the between🥑
