Have you tried the new range of hot cross buns from @woolworths _au ? The Mocha with Old Gold & Indulgent Chocolate Brioche hot cross buns are my favourite! I highly recommend you try them, they’re high quality baked in store, delicious & so moreish. This Easter I’ve partnered with Woolworths to bring you this Bombe Alaska I’ve created as a new and different way for you enjoy your hot cross buns this year. It’s simple to create & all the ingredients you need are in the one place! Here is how I made mine: I used a 23cm bowl which required 1 bag of 6 hot cross buns. 6 Chocolate Brioche hot cross buns. Honey macadamia Woolworths brand ice cream. Triple chocolate Woolworths brand ice cream. Peanut butter Woolworths brand ice cream. For the meringue: 4 egg whites. 1 cup caster sugar. 1/2 tsp cream of tartar. 1/2 tsp vanilla bean paste. 1/4 teaspoon of salt. Combine egg whites, sugar & cream of tartare in a bowl & set it over a saucepan filled less then half way with water (ensure the simmering water is not touching the bottom of the bowl). Continuously whisk the ingredients over the simmering water & allow the sugar to dissolve. Using your electric or stand mixer you can immediately begin whisking the mixture to form stiff peaks. Once the meringue begins to form, add your vanilla and salt & continue whisking until stiff. Assemblage: 1. Line your bowl with cling wrap then slice your hot cross buns approximately 1cm thick. 2. Place the hot cross buns along the sides of the bowl ensuring they’re tightly packed. 3. Fill the cavity with your favourite ice-cream flavours. 4. Cover the ice-cream with more sliced hot cross buns and cover with cling wrap. Return to the freezer for up to 4 hours or over night. 5. Prepare your meringue. 6. Flip out the hot cross buns & ice-cream from the bowl onto your cake stand and cover with the meringue. Use an offset spatula to create texture. 7. Use a chefs torch to burn the meringue.
