Pumpkin Cookie Dough Blondies cause life is way too short not to enjoy these!!! I roasted my own pumpkin and puréed it but you can use real pumpkin from a can (fave brand is @farmersmarketfoods 🎃). I have made cookies, pancakes, blondies, Mac and cheese, rice crispies and have plans for more pumpkin recipes. Now I just have to make my way through getting them OTB🥴 BLONDIES Preheat oven to 375. Line 8/8 tin with parchment. 1 flax egg 1 cup pumpkin purée 3/4 cup peanut butter 3 tbsp coconut sugar 1 tsp cinnamon 1 tsp pumpkin pie spice 1 tsp vanilla 3 tbsp maple syrup Pinch of sea salt 1/4 cup gf flour blend 1/4 cup almond flour 1/4 cup coconut flour 1/4 cup chocolate chips 1/4 cup chopped walnuts Maldon sea salt Mix wet ingredients plus spices together. Fold in dry. Mixture will be quite tacky. Add in chocolate chips. Spread mixture into prepared pan and press walnuts (and extra chocolate chips) into dough. Place in preheated oven for 30-35 minutes. Sprinkle with good flaky salt to finish.
