Celebrating summer in a bowl. Recently I developed a few recipes for @veganstokes and created the most unreal Garlic Scape Feta Pesto that I was literally eating on repeat before coming to cottage. I incorporated it into a few dishes and while this one may be suuuper simple it was absolutely perfect. The sugar snaps we picked, yellow heirloom tomato, organic radishes @jovialfoods farfalle, crispy tofu, avocado and arugula. These bowls don’t require a recipe, just whatever you yourself have on hand. So soooooo good. I will leave you with pesto recipe. It’s the bomb!!🌱😚 Garlic Scape Pesto 2 cups garlic scapes (roughly chopped) 1/2 lemon juiced 1 cup fresh basil and mint (mixed) 2 cups baby spinach 1/2 cup walnuts 1/2 cup @veganstokes 1/2 cup olive oil 1/2 tsp sea salt Cracked pepper Pinch chilli flakes METHOD Place all ingredients except for olive oil into bowl of a food processor and pulse several times to get started. Press start and slowly start to drizzle olive oil in, stopping to scrape down sides as needed. Process until you have a smooth consistency. Check for seasoning. Transfer to a jar.
