Lentil and trahana fritters inspired by our very favourite @akis _petretzikis . Watching his journey travelling in Lefkada and other parts of Greece, exploring many areas and their specialties inspired me to create something similar to one of his recipes. If you know me you know I love my fritters! This here is a variation of his recipe using the trahana and lentils as the base for the fritters I created today. 1 cup boiled green lentils. 5 Tbsp EVOO. I chopped onion. 2 cloves chopped garlic. 250g trahana. I used dairy free. 1 handful chopped mint, parsley and dill. 200g grated and squeezed pumpkin. 1 Tbsp ground cumin. 1 tsp dry oregano. 1/2 cup bread crumbs. 1/4 - 1/2 cup plain flour. 1/4 cup of aquafaba (canned chick pea water or you can use two eggs). Salt and pepper to taste.
