💥Pappardelle Pasta with Roasted Tomatoes and Mozzarella💥 RECIPE 👇 Boil some pasta until al dente, drain reserving 1 cup of pasta cooking water. Toss some cherry tomatoes with olive oil, salt and pepper. Roast in 400F oven until shriveled and have begun to break down, about 20-25 minutes. Remove from oven and add tomatoes and all the cooking juices to the drained pasta. Toss with as much pasta water as you think you need to create a sauce, 1/4 cup fresh chopped herbs(I used basil and parsley), 1/2 cup Parmesan cheese, chili flakes, salt and pepper.
