Teaching is in the chute so now it’s time to INDULGE in this gorgeous chia pudding stack of pancakes. And while I probably could have eaten the whole stack, I swear I did not🤣 Happy Saturday to you and yours. What is keeping your cup full this weekend? BUCKWHEAT OAT PANCAKES 3/4c buckwheat flour 3/4c oat flour 3tsp baking powder 1tsp cinnamon Pinch salt 1 aquafaba egg (3tbsp chickpea “water”=1egg) 1 1/2c cashew milk Whisk dry ingredients. Whisk aquafaba until foamy and set aside. Add milk to dry. If too dry add splash of water. Fold in aquafaba egg and let sit until pan is hot. **I had leftover chia pudding. It’s super fun to stack your pancakes with chia pudding jam😉but if you don’t have chia pud.
